As the name suggests, we’ve used just one variety of hop in this pale golden ale. Brewed with just low colour Maris Otter malt and a little wheat for head retention, we’ve selected some of the more “interesting” hops that we haven’t used before and added several bucket loads to each brew. Currently we’re using Sovereign hops, a relatively new English variety, similar in many ways to Fuggles and Goldings. Expect a spicy, slightly grassy finish.

Cask-conditioned at the Old Stillage, Bristol 29/08/09. Golden coloured with a slight white head. Aroma of grassy hops with a touch of sweet malt. Flavour had some initial sweetness, brambly hops and a long, bitter finish. Good.
