Pint on draft - turbid gold with a fluffy head - I appreciate what they’re trying to do here in making a "raw," unboiled, open-fermented ale - but I always have issue with beers like this - my palate is used to contemporary beer - does this beer represent an accurate recreation and the beers of yore? - no idea - is it enjoyable to my modern palate? - not exactly, but I don’t hate it - it certainly tastes "raw," in that there is a potent rustic graininess to it - but it’s also kinda vegetal up front - not sure if that’s on purpose - the tail end is nice - dry, moderately bitter and floral, with some earthy and pepper saison yeast character - the texture is also quite lovely - soft, full, frothy - whatever.
