Brewed using a single hop variety, which changes every month or so, our Single Hop range has gained a bit of a following. We add plenty of crystal malt and a small amount of black malt to a hot mash to give a full bodied copper coloured base with a slight roast malt flavour. Several generous hop additions during the boil create a beer that allows the character of each hop variety to shine through. (February - March: NZ Riwaka Hops)

Cask-conditioned at the brewery tap, the Old Tavern, Bristol 19/3/08. Deep amber coloured with a moderate off-white head. Aroma of caramel and red fruit with some earthy hops. Flavour began with more fruity malt, before juicy floral hops kicked in, leaving a pleasant dry finish. Good.
