In the Heart of ... is a collab with our friends at Tollgate Brewery. It’s so named because both our breweries take inspiration from stunning surroundings; Tollgate in the heart of the National Forest and us in the heart of the beautiful Peak District. The beer is a hop-forward Modern English IPA and for the recipe we worked with Charles Faram, who suggested we try Olicana from their breeding programme in combination with classic Goldings Hops. Cask at Hops, Crewe. Pours lemon yellow with ac small white head and good lacing. There’s a yeasty aroma with hints of summer fruits. In the mouth it is sweet and juicy. Malts dominate at first but floral vhops come through after a while. Flavour has grains, pineapple, melon and tropical fruits but all are restrained. Sweetness continues in the finish.
