This collaboration with Cerveceria San Paqual Baylon from Cholula, Mexico is an Amber Lager made with Mole Poblano. Mole (sauce) originated in Puebla, just outside of Cholula. Mole is a thick, rich sauce traditionally served with baked chicken or enchiladas. The mole for this beer was tailored specifically for use in beer and was made with peanuts, almonds, sesame seeds, three types of chiles from Mexico, mexican chocolate, tortillas, green tomatoes, cinnamon, coriander and raisins. All of the ingredients are toasted and blended. The mole was added during the whirlpool and gives the beer a light but distinctive toasted chile flavor with spices.

Sample at Denver Beer Co. during the "Collaboration Celebration" on 10/06/2017. Slightly hazy reddish-amber color with a thin off-white head that recedes steadily to an outer ring. Spotty lace. Aroma of malt, fruit and smoked pepper. Medium body with flavors of chocolate malt, smoky pepper and fruit. The finish is smoky with a malty and peppery aftertaste. Decent overall.
