Our monk is hip to the secrets of the legendary Trappist brewers that inspired the creation of this copper-hued ale, which combines rich malts and dark fruits with notes of sweet orange peel, coriander and star anise. Dark Belgian candi syrup in the kettle adds complexity, bringing hints of chocolate, caramel and nuttiness. It’s divine!

$9.99 500ml bottle from Total Wine, Gainesville VA. Pours reddish brown, looks like iced tea out of a jug. Only a dusting of a head. Aroma is sweet fruits: cherry, fig, orange; light spice; light caramel. Flavor is sweet cherry, caramel, bubblegum, alcohol, coriander, clove. Lightly carbonated, perhaps too light, but it works.

On draft at the brewery. Pours a hazy amber with an off white head. Aromas of caramel and toffee. Flavors of butterscotch. Smooth and malty.
