Copestone, our Port and Bourbon Barrel Aged Barleywine, is brewed, blended and bottled annually to share at this time each year. This batch began almost exactly two years ago with a simple grain bill of English Maris Otter barley and a touch of select specialty malts - all double mashed in the morning and boiled late into the evening with a hearty addition of Mauritian Dark Muscovado sugar towards the end. While we enjoy tasting Copestone during its start in stainless, it doesn’t quite resemble the Copestone we know and love so early - we get our first glimpse of it as we taste through those amazing port and bourbon barrels many months later. The transformation in those two years has been remarkable yet familiar - fans of Copestone will love this batch but each year we strive for subtle refinements and think they show in this year’s bottles. 500 ml Bottle | 14.5% Alc.
