We steeped the branches (with leaves and flowers) of Myrica Gale in the coolship for one night. The beer was then barrel-aged for a year. Just before bottling, it was shortly macerated on bergamot zest. Gale is a mysteriously aromatic plant, growing in wetlands, and is considered a crucial part of the medieval gruit-mixture.

0,75l bottle at home. Bottled May 2024. yellow clear color, medium big white head. smells earthy, grassy, herbal, peppery, tobacco, wildflowers, some citrus. very nice smell. full body, soft carbonation. tastes herbal, tobacco, peppery, earthy, some citrus, thyme, wildflowers. finishes medium bitter and lightly sour with notes of pepper, tobacco and wildflowers. pretty good one, great smell, taste does not totally click (yet), its a tad heavy, this should be great in another year. But very nice one though.
