We pressed different varieties of Normandy poiré-pears (Plant de Blanc, Vinot, Gaubert...) harvested at ‘Ferme de L’yonnière’ (Jérôme Forget), and co-fermented this juice with the juice from local heirloom apple varieties. With just a mimimal practice of ‘soutirage’, this poiré-cider finishes bone-dry.
