This adventurous series provides us with whimsical opportunities to share an assortment of blended beers, exploratory aging techniques, and distinctive ingredient pairings.
Nonconformist 12 is a delightful representation of timing, chance, and creativity. We filled a wine barrel and an Aromatic/Gentian Bitters Barrel with Self-Reliance: Citra®, each of which rested for three months while developing nuanced acidity from the metabolic contribution of our resident microflora. Following its barreled residency, we blended the two components and added an elemental and novel blend of bee pollen, quince, pine pollen, and lemon myrtle. The result is enchanting and complex—a familiar form that casts a shadow of its distinctive oak past.
As always, the label features the inventive artwork of our creative collaborator and lifelong friend, Alex Peltz of Peltz Creative, who has inspired and supported our journey from the outset.

Bottle: pours orange with a white head. Aroma is winy, citric, woody barrel, some bitters are noticeable. Taste is lightly tart. Sweetish. Citra hops mutated but well represented. Complex and deep.
