We finally found something useful to do in the autumn heat in Hanoi. Fermenting a Saison, or Farmhouse ale.
Made the traditional way. Just ferment in the shadow, not temperature control, and add some spices, orange zest and some cloves to match it.

Hazy golden colour, tall and long lasting white frothy head. Smells of spicy yeast, floral notes, light perfume, wheat bread. Taste: medium dry to light sweet, malty, spicy, floral, wheat, hop. Light plus bitterness, warming alcohol. Palate: medium minus body, proper carbonation. Overall: solid

Definitely a lot of orange zest in this one. Also some pepper, a little floral aroma. Pours hazy orange with ok head. Light tangy end. Bottle.

Bottle from Furbew, Hanoi. Poured a hazy golden colour with a frothy white head and lots of small bubbles. The aroma is malt. dry saison yeast, some light citrus, light clove / pepper spice. The flavour is acid yeasty citrus with a smooth, butter toffee, light fruit, rich, light spice palate. Medium bodied with lively carbonation. A rather good example of the style I would say.

On tap at Furbrew, pours a clear golden with a small white head. Aroma brings out lots of esters, green apple and candied sugar. Flavour follows through, with tons of esters, saison yeast, candied sugar and alcohol. Fairly authentic, though rather boozy. Could use some tweaking and more expression of farmhouse character. Decent.
