Fermented with a combination of our native microflora, one of Tilted’s native yeast strains and our farmhouse mixed-culture. After a period of aging in an oak foeder, we re-fermented Persimina atop a mix of paw paws from Hunts Brook Farm (Waterford, CT) and fresh peaches.
