Spring Thaw is a Maple Cream Ale that we brewed with our friends at the Central Lake Ontario Conservation Authority. This year marks 50 years of maple Syrup production at their Purple Woods Conservation Area and we thought it would be fun to brew up something to celebrate.
For this beer we wanted to create something that was light and crisp, and really worked to have the maple be a part of the beer rather than take it over completely. We strived to balance the flavours of a typically mild beer style with the punchy, distinctive flavour of the syrup. The result is almost surprisingly refreshing and super easy drinking.
