Our recipe was created to yield a Hefeweizen as true to the tradition as possible. Malted and flaked wheat made up over half of the grain bill. We employed a special mashing technique to help encourage the yeast to maximize its production of fruity esters and spicy phenols. We minimized the settling time, left the beer unfiltered, and stored kegs upside down to allow a traditional yeasty haze in each pour.

Banana, orange, clove, wheat malt, and straw aroma. Cloudy pale yellow with moderate white head. Moderately sweet banana, orange, clove, wheat malt, and mildly bitter straw flavor. Good body.
