If saccharomyces is the ‘Dog’ of the brew house, obedient, loving and predictable… Then Brettanomyces is the ‘Cat; unpredictable, odd behavior, disobedient yet if given the chance it will dominate the brewhouse. We ferment in old Cabernet barrels and age for a minimum of 3 months leaving you with a complex range of funky, malty and oak driven flavors. The aroma may be a little different to what you are used to, but that is just the ‘cat’ doing its thing.

Tap at the Royston Hotel, Melbourne. Poured a murky medium brown with a frothy white head. The aroma is yeast sour fruits. The flavour is moderate sour with a light crisp bretty, smooth buttery yeast, dough, biscuit, tart citrus palate. Medium bodied with soft carbonation.
