We harvest the same day 1000 kilo apricot and add the same day to 1500 liter lambic. After one year fermentation and spontaneous refermentation on the bottle we can taste this delight. Not sweetened. Gezondheid.

Bottle at Monk's: pours light orange with smallish head. Aroma is hefty apricot notes, some funky yeast, hints of wine or vinegar. Taste is fairly acidic. Apricot is very strong and well expressed. Not sweet. Fruit is nice but would have liked it to be less sour.

Bottle pour at Zwanze Day 2026, at The Sovereign in Washington DC. Poured a mostly clear golden yellow color with a medium sized white head. Aroma was tart apricots. Flavor was pleasant fruity apricots, light sour notes, but not overly tart, other than that fresh fruit tartness. Really nice stuff actually.

Aromas are malt, brett, apricot and spice. Flavors are similar to nose, tart and dry with a hint of sweet in the finish. Decent body and carbonation. A little too tart for me. And unbalanced.
