Bottled exclusively for Jak's Liquor stores, this is a special blend of Pender Island heritage apples: Baldwin, Bramley's Seedling, Belle de Boskoop, Kingston Black, Blenheim Orange, and a mix of unknown wild-seedling apples from island roadsides. The batch was fermented slowly in cool temperatures over nine months, retaining a juicy, apple-forward profile with a touch of residual sweetness. A well-balanced, approachable cider. Only 28 cases made. Each bottle underwent a secondary in-bottle fermentation for natural bubble. Harvest 2024.

750mL bottle, pours a hazy blonde with a small, quickly-dissipating white head. Aroma is quite funky, with a nice farmhouse funk, hay, and crisp apple skins. Flavour has a big champagne-like effervescence, lots of farmhouse funk, bone dry apple skins, and finishing highly carbonated. Bone dry, champagne-like finish. Excellent.
