We decided to get a little experimental with this batch of stout. Conjuring memories of some of our favourite smoked beers, we had a desire to create our own. To add an extra splash of umami to this beer, we chose to use Shiitake mushrooms as our smoked vessel. Smoked on-site and then added to a tank for the beer to circulate through, imparting a delightful touch of smoke. The result is a subtle peatiness that adds a whole new depth of flavour to this stout. Caramelised molasses and soy sauce work together beautifully for a unique drinking experience.

Keg at St Albans beer shop, St Albans, Herts. A very dark brown/black coloured pour with a healthy beige head on top. Roasty, malty, chocolate, smoky, umami, caramel action. Nice one.

440ml can. Pours black with a tan head. Aroma of roast malts, chocolate, smoke, soy sauce. Taste of roast malts, chocolate, umami, peaty, soy sauce, kinda sweet with a light bitter smokey finish. Medium bodied. Really good and I'm not even a fan of mushrooms generally.

TCBW2025. Black colour, small brown head. Aroma is wood, some smoked and toasted tones with some caramel and mild umami feel to it. Flavour is smoked wet wooden tones with some more fresher smoke as well as some umami and wood with a bit herbal tones too.

Tap at 73 Enid Street. A opaque black brown coloured pour with a lasting lasting beige head. Aroma is nice big robust roast, birch, black malts, ashy roast, smoke. Flavour is composed of semi sweet, rounded layered malts, ashy roast, birch smoke, bamberg vibes, earrhy notes,. Palate is semi sweet z rounded, moderate carbonation.

Keg draught at the Two-Tailed Lion, Leicester. Very dark brown, almost black, almost opaque with a small layer of buff/khaki head. Smells of earth, light smoke, mushroom. Taste is surprisingly sweet with hints of liquorice, dialled-back treacle, black malts. Much less of the smoky earthy notes in the aroma. Lighter body than the ABV would suggest, fairly heavy carbonation. Great stuff.

Appearance is very dark, with a big foamy beige head. Aroma- roasty smoky notes, dark malts, chocolate hints, coffee. Soy is detectable. Burnt caramel. Taste is soy, caramel, treacle, chocolate, roast malt, caramel biscuit, nutty notes, earthy hints, golden syrup. Sweet chocolate in the finish. Definitely different, works.
