Introducing the fourth installment in our hybrid stout series—a labor of love years in the making. This series blends techniques from our old brewhouse with the capabilities of our custom-built brewhouse, designed for bold imperial stouts. This year’s brew pushed boundaries: what once took three separate mashes, we achieved in one, sparging-free run. After an overnight boil reducing the wort by half, we mashed in again and boiled for over 30 hours total—a feat impossible on our old system. Brewed once a year, these beers are aged in special barrels, embodying a unique hybrid process. Each release is named for a fictional hybrid animal, paying homage to innovation and tradition.
