A lager brewed for cask using Heritage Hana Malt to bring a smooth fresh bread flavour, paired with Light Munich Malt for a light, spicy finish. It was lightly hopped with East Kent Goldings to add a subtle honey sweetness and round it out with some earthy flavours. Lagered at 0 degrees for around 2 weeks to bring out that distinct lager crispness.
Caer Daun is the original, pre-Roman, Brythonic name for Doncaster. Caer meaning a Stronghold or Fortress and Daun possibly meaning Lord, Cleric or Monk so the full name probably translates to "The Lords Fortress" or "Fortress of the Lord
