Our Trippel has always been a big, beautiful Belgian-style ale, but in 2015, we tweaked the recipe to include a new yeast variety and even more complex malt profile. This golden beer opens with a bold blast of spicy Noble hops, courtesy of Saaz and Hallertau Mittlefruh, and gives way to the fruity aromas offered by our traditional Belgian yeast. Brewed with Pilsner and Munich malts, Trippel is classically smooth and complex, and sings with a high-note of sweet citrus before a pleasantly dry finish delivers a warm, strong boozy bite. Lots of coriander here. Pours golden clear, not much head or lacing. Aroma of coriander isnt super well integrated. Also some floral hops, but overpwered by coriander. Taste is spicy bitter. Bottle.

From a 12 oz bottle shared at home. Pours a hazy gold with a white, not too thick, head. Aroma of citrus and yeast. Notes of orange zest and coriander. Bitter finish. A decent tripel.

Bottle. Pours a a clear golden with a thin off white head. Aroma is light, it has some sweet maltiness to it. Taste is light Belgian yeast with some fruit and spice (coriander?) notes. Rather light in feel for the style. Light bodied. Maybe a good starter Trippel.

22 oz bottle. Pours clear golden amber with a white head. Yeasty clove aroma, slightly musty, green apple. Straightforward yeasty clove and green apple flavor with biscuity malts. Simple, good flavors, and I kind of like it for that.

Light hazy but mostly clear golden with a firm white head. Aroma is sweet, lightly spiced, a bit of earth, and yeast. Flavor has a much stronger bite than the aroma would lead you to believe. Sweet malts, yeasty, spices, herbal notes. Finish has a nice yeast and spicy bite. Medium, smooth body. Pretty solid brew.

Bottle, many thanks to my summer Secret Santa. Orange golden color with small white head. Aroma of malt, yeast, caramel, spices, floral notes. Taste, sweet malt, honey, yeast, citrus. Strong bitter finish. Good.

Purchased at Binny’s in Chicago, IL; enjoyed on a very warm mid-March evening after work sitting at home. Appearance is very nice, rich white head that laces to the glass, tiny carbonation bubbles that rise from the middle of the glass and nowhere else, haven’t seen anything like it. Aroma of clove, coriander, Belgian yeast, bit of pepper, really nice aroma. Taste is very good, coriander, lemon zest, slight bitterness, peppery aftertaste, other Abbey Tripel’s have a higher ABV but I like that this one isn’t as high up there (still strong though). Definitely enjoyed this one, give it high marks.

12 oz. bottle, bought Jan 2011. Sweet and light spicy nose right in the bottle. Pours a bright gold with a touch of rose in my glass, under a half finger of yellowish white foam. That coriander is foremost in the nose when I sniff the glass, but also a slightly heady malt alcohol at play. Taste is just what I needed tonight. A very warming alcohol based on light malts; it could slip into adjunct territory if I didn’t know better. Hops are greatly diminished in a bottle this old, but no regrets. Just lots of that special Belgian aromatic malt, a warm ale ferment, and I’m happy tonight.
