A blend of Danish Wild Ales aged in Amarone barrels for 8 months was selected to pair with amazingly fresh and locally grown Opal plums from our good friend and biodynamic farmer Verner, located in Slangerup just outside of Copenhagen.
We only make Opal on years where the vintage is exceptional, and 2020 was a fantastic year for plums at Verner's farm.
The Amarone barrels pair perfectly with the flavour of sun kissed plums, low in acidity and high in aroma and flavour, Opal 2020 is sure to be a crowd-pleaser!

1.5L bottle, pours a clear bright golden with a small white head. Aroma is full of bright tart plums, gentle floral notes, and plenty of bugs. Flavour is much the same, with floral plums, moderate acidity, and gentle tartness on the finish. Good complexity and this has held up well. Very good.

75cl bottle. PBF XIV 2024. Poured clear golden in color. Apricotty funky with notes of barnyard, plums. Dry and enjoyable.

Golden colour, small white head. Tart apple and fruits in the nose. Light-bodied. Tartish but easy drinker. White-wineous, funky. Ok+

--Bottled at PBF XIV. -- Clear golden, small head. Citric nose with some plums. Acetic with medium body and clean mouthfeel. Plums, mild funk, puckering acidity. Low bitterness.

Bottled@Zinc Craftbar. Vaasa Blend 1). Hazy orange colour, small white foamy head. Aroma is fruity, floral, some tartness with mild bananas too. Flavour is fruity, floral, bananas and some mild tart wooden elements.

Intensiver Geruch nach Pflaumen, dezente Säure. Fruchtig säuerlicher Beginn, moussierend. Spritzig, milde Holznoten, etwas trocken, was aber passt. Mild hefig, ansteigende Säure, süffig. Trocken fruchtiger Abgang. 11/12/11/12/9/12

Bottle @ Mikkeller, Odense. Pours hazy red gold with a white head. Wood, red plums, juicy fruit, funk and jam. Dry finish. Very cool and tasty.

Sampled at Borefts Pre-Tasting. Darker orangy color, small to average sized off-white head. Smell and taste remind me of a Flemish red-brown. Tart, maybe tart red fruit notes. Hmm not my thing. Very dry. 5-3-5-3-9
