Scotch-Style Ale Brewed with Candi Sugar and Coriander

Scotland is known for its bagpipes and its beers, and this Scotch-style ale adds Belgian Candi sugar to the mix, giving it deep notes of toffee and dried fruit accented by the spicy herbal aroma of coriander. The eleventh verse in our 12 Days of Christmas Series, 11 Pipers Piping is an extra smooth and malty, full-bodied jig of a beer.

Draught. Rubyish brown colour with a small off-white head. Aroma is plum, some caramel, rye, mild toffee as well as a wee bit of alcohol. Flavour is rye, some dried fruits, plum, caramel, mild toasted tones with some toffee and a wee bit of alcohol. Quite warming in the finish. Good sipper.

Bottle. Pours a brown reddish hue with a white head. A big sweet nose, dark caramel, molasses. Rich layers of malt, light smoke, spices, leather. Very good.

750ml bottle split at Northern Monk Refectory, Leeds. Pours unclear mahogany brown with a dark beige head. Aroma: roasted malts, coffee, dried fruits, caramel, bread liquorice, light smoke. Taste: moderate sweet & light to moderate bitter, roasted malts, spices, chocolate, coffee, caramel, dried fruits. Medium to full body and mellow carbonation.

750 ml from the RS. Nice scotch and malt nose. Taste is very malty with chocolate malt to include a toffee like flavor. Soft spice finish. This has a very smooth, light and creamy mouthfeel. ABV is hidden well. It is solid.

Bottle pour in share from AirForceHops--thanks, Chris! Look is opaque dark brown (cola) with no discernible sparkle, no head, nice viscosity. Smells strong caramel and fig. Taste is strong caramel, extra sweetness from the sugar and maybe a hint of the coriander. Mouthfeel is light-to-medium bodied with thin texture, soft-to-average carbonation and finish as taste. Overall, strong Scotch ale but the adjuncts don't seem to add all that much.

Cellared for nearly a year. Brown with a creamy, beige head. Big time coriander aroma that almost smothers the rich toffee notes more typical of the style. Taste is mildly sweet up front, deepening farther along and finishing with a candied sugar. Full-bodied, mild carbonation. No sign of the abv, and only a mild warmth at the end. Could be dangerous. Good but not great.

Bottle 750ml @ yngwie
Pours dark reddish brown with a beige head. Aroma has notes of malt, caramel, dried fruits and alcohol. Taste is heavy sweet and light to medium bitter with a long warm, caramel, dried fruity and brown sugar finish. Body is full, texture is oily, carbonation is soft.
