Scotch-Style Ale Brewed with Candi Sugar and Coriander

Scotland is known for its bagpipes and its beers, and this Scotch-style ale adds Belgian Candi sugar to the mix, giving it deep notes of toffee and dried fruit accented by the spicy herbal aroma of coriander. The eleventh verse in our 12 Days of Christmas Series, 11 Pipers Piping is an extra smooth and malty, full-bodied jig of a beer.

Draft. A black beer with a lazing dark brown head. The aroma has notes of roasted malt, caramel, spices, and a bit of chocolate. The flavor is chocolate, caramel, prunes, spices, alcohol, and a bit of roasted malt, leading to a bitter finish.

29 November 2019. At Billie's Craft Beer Fest. Cheers to the lovely Anke, tderoeck, 77ships & Ghent beer crew! Hazy brown with a small, foamy, tan head. Aroma of green tea, coriander, caramel, butterscotch, candied orange & banana. Taste has very sweet sugar, caramel & candied fruit with a herbal, spicy & woody accent, kept together by brioche-like malts. Herbal hoppy finish, quite malty, coriander in the back, and warming whisky alcohol. Full body, syrupy texture, soft carbonation. Interesting concept, coriander used in an elegant way actually; but never the tastiest of Scotch Ales.

Drank side-by-side both the original and rebrew. Aroma is malt forward with lots of caramel, toffee and toasted bread. Lighter notes of nuts, burnt sugar and hints of chocolate. Raisin, date, and prune notes with some light coriander and alcohol spice. The rebrewed version has a bit more coriander and malt complexity. Both pour dark brown but not quite black with auburn hues and a large, thick, pillowy tan head that recedes steadily to a small, creamy film that lingers. Light lacing and somewhat long legs. Flavor is fairly sweet with lots of malt notes. Loads of caramel, toffee and toasted bread with lighter burnt sugar. Faint nuts and chocolate notes. Moderate raisin, fig, and date notes with lighter prune and hints of cherry. Light coriander and alcohol spice notes. Medium bitterness. Mouthfeel is medium full bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, a decent beer. The rebrew's malt profile is more upfront and bright but the older bottle is a bit better rounded and soft. Not sure the addition of coriander improves a scotch ale, but it doesn't make.it much worse.

Bottle, 75cl. An unclear brown beer with a finger-thick dark beige head. Roasted malts, some smoked hints, coffee, dried fruits, caramel, bread and some licorice in the aroma. Spiced, roasted malts kind of flavor with chocolate, coffee, caramel and some dried fruits. Full body and a nice carbonation, rather smooth, with some alcohol warmth. Lasting finish. A quite delicious one. 191231
