Mashed with southern select two row barley from our good friends at @riverbendmalt of Asheville, NC along with a decidedly delicate blend of the finest caramel, chocolate and roasted malts. Fermented cool with our preferred house ale yeast for a touch of residual sweetness and a luxurious mouthfeel. Steeped on heaps of Virginia and North Carolina whole oysters. Blended with North Carolina sea salt from the Outer Banks Sea Salt Company for increased salinity and complexity.

Originally named after the @theburkeartscouncil and crafted for their annual oyster outing, we have been brewing this smoked and salted oyster stout for the past four years. Historically one of the first beers intentionally paired with food, oysters help cut the acidity from dark roasty malts and lend a smooth and salty finish.

Sample at the taproom. The beer is a pitch black color with a medium creamy beige head that diminishes gradually to a dense film. Small patches of lacing on the glass. Aroma of roast malt, dark chocolate and earthy coffee. Medium body with a roasty malt character and notes of bittersweet chocolate, coffee and a bit of brine in the background. The finish is charred malt and dark chocolate. Pretty good overall!

Location: Nitro at the brewery, 1/4/15
Aroma: It has a pretty nice aroma of roasted malts, sweet malts, and some hops
Appearance: This is a really great looking beer. It pours a deep, dark brown color, with a thick froth of brown head, that is super creamy and long lasting, with nice lace work
Flavor: The flavor is balanced, it is light sweet, with some roast, and a light bitterness
Palate: Very smooth, with a creamy feel, on the lighter side, clean, easy drinking, lightly dry finish
Overall Impression: This a really nice looking beer for sure. The aroma and flavor are nice, and the nitro treatment works well.
