Mashed with southern select two row barley from our good friends at @riverbendmalt of Asheville, NC along with a decidedly delicate blend of the finest caramel, chocolate and roasted malts. Fermented cool with our preferred house ale yeast for a touch of residual sweetness and a luxurious mouthfeel. Steeped on heaps of Virginia and North Carolina whole oysters. Blended with North Carolina sea salt from the Outer Banks Sea Salt Company for increased salinity and complexity.

Originally named after the @theburkeartscouncil and crafted for their annual oyster outing, we have been brewing this smoked and salted oyster stout for the past four years. Historically one of the first beers intentionally paired with food, oysters help cut the acidity from dark roasty malts and lend a smooth and salty finish.

Row 34 draught, 5/16/23. Dark. Light tan head quickly to ring. Coffee, chocolate, vanilla, espresso. Lots of roast, lots of licorice. Creamy roast. This is the creamiest, softest, heavily roasted stout I've ever had. Not sure how I feel about this. The texture is insane but wish we had more base malt and less hard bakers chocolate flavor. Still, this is some soft, mineraly shit, roast or no roast.

Tap. Black with a modest but lasting tan head. Roasty aroma with mocha, brine, some liquorice. Full, smooth body. Rich but not all that sweet - a lick of caramel with the mocha. Some iodine. Bitterness nags through. Good, great texture.

Not surprised Fonta Flora nails the oyster stout; they love the fringe, and, traditional or not, putting oyster shells in your beer ain't for the dull. Lovely chocolate and roasted malt notes layered on top of anise and a firm briny baseline. Finish grows charred and bitter, with the salinity lasting long into the fade. Not sure exactly how many oyster stouts I've tried, but this might be the best yet. Delicious.

Can, thanks to Travlr. Pours opaque dark brown with large foamy tan head, mocha-biscuit aroma, low carbonation, mildly bitter mocha-biscuit taste, thin body, long finish. A bit thin but very tasty.
