Longtime and dear friends of Volo, Erica & Iain McCoustra lead brewing operations at Steam Whistle and Amsterdam Brewing Co., respectively. Over the years, Erica and Iain have brewed a couple Dampfbiers with Ralph at the original Volo on Yonge Street. For this version, we used a Weissbier yeast along with a more rustic, historic type of German malt. The result is a slightly spicy, deep golden beer that is dry and refreshingly nuanced.
