Lagering in Mexico started back in 1865 when a brewery later named Toluca y Mexico was founded, serving a pale ale known as Sencilla. Santiago Graf took over the brewery in 1875, producing the brewery’s first lager when construction of rail lines between Texas and Mexico made it possible to import the first ice machine. Toluca Sencilla is a crisp lager with a light, slightly sweet body, notes of maize, and a hint of lime.

Sampled from the tap at the brewpub. Pours a clear light grains with a bit of straw and a hint of leaves underlying. Flavor combines grain and straw with light leaves and a touch of sweetness coming through.
