“Tmavé Pivo” literally means “Dark Beer” in Czech, and it’s a bit of a rarity, even in its home country. Although overshadowed by world renowned Czech Pilsners, the Czech Dark Lager has been steadily growing in popularity for its rich, malty complexity that manages to deliver a balanced and refreshing experience. The ideal version should be slightly sweet with a light caramel flavor, a noticeably full body, and a healthy charge of Saaz hops for a bittering balance that delivers what the Czech brewers call “pitelnost,” meaning “drinkability.” To get the body to stand up to the fullness of the dark malts and bitterness of the Saaz hops, we crafted a 13o wort (degrees Plato is the standard measurement for the density of brewers wort)
