Our Grisette, dry hopped with Nelson Sauvin, has taken gold in Mixed-Culture Brett Beer at this year’s @greatamericanbeerfestival.
Brewed with custom malted Tennessee grown barley from @riverbendmalt and Tennessee grown unmalted wheat from Teeter Farms, hopped with Strata and Nelson, open fermented in oak barrels, aged 15 months, and dry-hopped with more Nelson.
Special thanks to Yvan De Baets, who inspired the name after tasting our first batch of Grisette and telling Joel, “This is aged. This is keeping beer.”

500 c&c from Tavour. Pours translucent gold with a decent white head. Aroma is sourish with lactobacillus. Med body. Flavor has white grape and the lacto is rather smooth and restrained. Might be a bit of Brett, but I'm not sure. Background of oak astringency. Seems a bit floral with time. Excellent for the style, but Brett would have been an improvement.

Khyber Pass: pours pale yellow with small head. Aroma is limey, vinegar, more citrus. Maybe some floral notes. Lightly sour. A sweet note. Refreshing and delicate. Quite good.
