The anima does not take a man by the hand and lead him right up to Paradise; she puts him first into a hot cauldron where he is nicely roasted for a while.
Inspired by the red-brown sour beers of Flanders, we added some different caramelized malts to our grain bill, in order to make a more vinous and dry version of those classical styles. Barrel aged for fifteen months in Pinot Noir barrels from Burgundy.
