This blend of one-, two-, and three-year-old spontaneously fermented ales was produced in San Diego county and is inspired by the Belgian process of making traditional lambic. California-grown pilsner malt and raw, unmalted wheat create the foundation of this blend, which was inoculated solely by wild yeast and microorganisms indigenous to the Miramar area and Mt. Laguna during a Pure Lambic camping trip. Warm-aged hops added to the boil provide aromas of funk, Asian pear, and earthiness. High levels of carbonation make for a brew that practically dances on your tongue with tastes of fine cork, bready malt and gooseberry. The bright acidity upfront gives way to a smooth and refined finish that is both dry and refreshing.
