Lombok is many things. It is an Indonesian volcanic island, a multicultural neighborhood in Utrecht and an old name for the common chili pepper. Together with sambal makers Nona Pedis, we’ve combined the many interpretations to make a beer. As a base, we brewed a doppelbock (German for ‘double bock’), a bottom-fermented malty beer, with heavy notes of toffee. Adding chili pepper and toasted coconut, Lombokbok is liquid indulgence with a spicy edge.
