In Briscous, Kipett beers flow like hot cakes on the Basque coast. It is a love story that is at the origin of the Kipett micro-brewery, based in Briscous: the love of beer of course, but also of the Basque Country and a job well done. Craft beer enthusiasts will be delighted to discover the ten varieties made 15 minutes from the coast by Erwann Portais.
As Erwann points out, Kipett is a micro-brewery: “I make around 20,000 liters a year, which is very little, and all the production is sold out very quickly.” Victim of his own success ? Certainly, but while waiting to be able to buy more equipment, Erwann focuses on quality: “In all beer production, there is a fermentation time to respect, first in the fermenters then in the bottle, so we don't cannot release new production in 2 weeks.”
The philosophy of the Kipett brewery is humble: Erwann would like his micro-brewery to remain one, that is to say on a human scale. His dream: to continue to work with his wife and offer a different beer each month, in order to satisfy his passion for recipes.
But by the way, where does the name Kipett come from? “This is a question that I am often asked! But the answer is very simple, it's one of the nicknames of my cat, who remains faithful to my side every day at the brewery. Hence the illustrations of the cat present on each bottle. Erwann also sells at his warehouse: to be sure to be able to get his beers in time, nothing better than to go to the source!
