The Monsieur Paon microbrewery was born from a beautiful friendship. Damien, Hugo, and Olivier, three friends and beer enthusiasts, brewed at home for a long time, in their kitchens or cellars. Highly appreciated by their friends and family, their beers quickly became victims of their own success.

Drawing on their experience in industry and microbiology, they wanted to increase their production while also professionalizing their operations.

This led them to the idea of ​​joining forces in a craft microbrewery. A year ago, they found the perfect location, just a stone's throw from Lille Flandres station, and embarked on their adventure, supported by brewery creation professionals and members of Cigaleurope 2.

Thanks to Olivier's expertise in microbiology, they produce their own yeast using Belgian liquid strains. This is a rare occurrence among microbreweries! This gives them complete control over the yeast production process, allowing them to brew all kinds of beers and differentiate themselves from existing offerings.
