About
Raphaël Mettler and his team have been brewing beer with a passion since 2003, and their enthusiasm is eminently contagious: the Trois Dames beers from Ste-Croix challenge the taste buds and flatter the eye, and that is exactly what makes them original. We believe in making a top-notch product, the reason why we carefully select fresh ingredients.

Craft Islington Bottleshare. Light palate, semi dry, decent fine carbonation. Mellow dark malts, touch of dark chocolate. Rich fruity spicy bitter finish. Has a weird barrel aged vibe, almost peaty. Spicy linger. Okay.

Sampled draft @ In De Wildeman. Citrus golden with a soapy white head. Nose is lemon, weird paper, bread, yoghurt but lemon, citrus dominates. Bit lively tastes like lemon, citrus juice with brett, faint hop, sour quince & some elderflower funk. Basic but tasty.

75cl bottle @ Chez Sophie Christmas Beer Tasting 2018. Pours a hazed golden amber, off-white head. Vibrant white wine on the nose. Crisp and bright on the palate, taste presents sharp wild sour complexities given a welcome warmth and sweetness by the chardonnay influence. A little acetic presence. An impressive, complex barrel-aged wild sour.

750 ml bottle, bottled fall 2017, shared by PowY thanks!
Orange, hazy body, with a big, frothy, lacing, off-white head.
Aroma of funk, cheese, citrus, green apples, orange, barrel.
Tastes quite similar, with some lemon candy.
Medium, slick mouthfeel, with a moderate carbonation.
Finishes smooth, moderate sour, a bit sweet, wooden, citric, with some apples

Tasty! Really well balanced, with just enough sourness and sweetness, lovely funk notes and crisp fruits. Drinks really fresh and surprisingly easy for the ABV. Pleasant surprise, very lovely stuff.

From bottle. Pours a guava hue, with almost no carbonation. Barrel notes on nose. Astringent and dry, with lingering vinegary character. Intriguing but not quite all it could be.
