A commercially produced pymet - nice - production date July 2004 - hazy purplish pour - nose of honey (duh), a lot of soft herbal notes, light acidity, sweet, juicy red grapes, very light tannic character - the flavor is initially all sweet honey, but some notes of herbs swell up through the middle (mostly sage), as well a mild wildflowers - the qualities of the wine gradually build from under this, and the moderate tannins work well with a slightly vinegar-like acidity that develops - some sweetness returns in the end, combining with the wine to produce a flavor not unlike port - spicy, peppery alcohol in the finish - warming, but not boozy - not as refined as it could be, but quite tasty.

Backroom sample from the bottle at Whole Foods Charlottesville. Pours a clear amber color. Aroma is sweet honey with a faint but of spice. Taste is overly sweet and closer to apple cider than mead. Very light notes of honey, spice and a fair bit of alcohol. Medium bodied.

750ml dusty bottle. This melomel pours with a clear reddish-purple body and no legs or head/lace. Looks like Welschโ€™s Grape Juice in my glass. Aroma of sweet honey, tannins, raspberry, grape and strawberry. Taste is sweet with grape and raspberry, a slight minerally note, and the classic honey/yeast profile that runs through all of Redstoneโ€™s meads. Very light effervescence, refreshing mouthfeel.

750ml Bottled on June 4, 2007. Labeled as Redstone Meadery Honey Wine with Juniper Berries. Pours a clear yellow hue with some particulates and decent legs. Aroma is sweet honey with some wine tannins and a bit of bitterness (from the juniper?) in the finish. Taste is sweet upfront but balanced by the spice and bitterness of the tannins and the juniper. Alcohol is noticeable, but this stuff is still very drinkable. Thin mouthfeel for a mead of this gravity.

(Bottled, produced 07/2004). Dark hazy red wine color, no head. Portwineish, sweetish, herbal with strange berry aroma. Red wine tannines, some port wine, clovey-honey, not sweet. Interesting cross-over of American mead and red wine.
