The name Ecliptic Brewing unites John’s two passions: brewing and astronomy. The ecliptic is earth’s yearly path around the sun, and we celebrate this journey through the seasons with the food and beer we make. We rotate our scratch-made menu every six weeks, always highlighting seasonal and local ingredients whenever possible. Our brewhouse showcases several beer releases each year, ranging from modern and experimental brews to long standing favorites. And through it all, we respond to our customer's desires and introduce them to new experiences that keep them coming back for more.
Flagship beers include Starburst IPA, Carina Peach Sour Ale, and Capella Porter. Our seasonal series changes five times a year and includes favorites such as Quasar Pale Ale and Filament Winter IPA. We also brew a selection of Special Releases and Cosmic Collaboration beers.

500ml bottle. Pours a cloudy yellow volor with a medium sized white head that has fair retention. The aroma is light with discernable citrus, Belgian yeasts, a bit of brett and some banana. The taste is mostly dominated by lemony citrus and mangoes with winey notes filling in the back end. The palate is full with lively/prickly carbonation. Finishes long with lingering esters. Bottle. Blackish pour with a small beige head. The aroma is quite strong with dark chocolate, blackened grains, walnuts and some booze. The taste, like the aroma, has dark chocolate in the forefront followed by cocoa, nuts, chocolate liquor and vanilla. The palate is full and sticky with prickly champagne-like carbonation. Overall: Well made, but just a bit too sweet for me. Paired with pepper jack cheese and roasted salted cashews to cut the sweetness.

A hazed golden ipa with a thin lacing white head. In aroma, nice biscuit malt with resinous floral hops, grapefruit pulp, light dank notes, pleasant. In mouth, a nice biscuit malt with resinous floral hops, grapefruit pulp, light tropical fruits, light doughy character, pleasant. On tap at The Drake.

12 oz can poured. Crazy seeing the Ecliptic est. 2013 on the can, as I remember stumbling across the brewery during soft opening on accident that very year and having a brew just like this one, on my way to Stormbreaker. Not sure if it was this brew, or a version of this brew. Perhaps I'll never know. No surprise they have made it this far since those days. Golden orange with a gentle haze. Foam head that lasts. I love that the brewery puts out this big near 8% brew, and it's their standard IPA. Stone fruit aroma. Bold and bitter hops with plenty of citrus tones. Lingering citrus peel like bitter. Solid IPA overall, and definitely belongs on their year round lineup.
