The vast and delicious cuisines of Central and South America hold a treasure trove of flavors, aromas and textures, much of which feels right at home in a well-made beer. We combine these ingredients and ideas with our own experiences to make subtle and deeply delicious beers, not mere novelty items. Each beer speaks with our voice and adds to the story. From the July 3R6P tasting. +++ Sampled from a 12 oz brown bottle this beer poured a dark nut brown color with a huge foamy beige head that lingered and left great lacing. The aroma was malty and nutty with a hot pepper presence. The flavor was tangy, malty and a touch skunky with notes of nut and hot peppers. The finish was medium length tangy, nutty and hot pepper. Medium body. Odd.

This beer is a clear pale golden color with a thin fizzy white head that burns away steadily to an outer ring. Spotty lacing on the glass. Aroma of mild hops and toasted malt. Light-bodied with flavors of lightly spiced hops, bready malt and a bit of grain. The finish is lightly bitter with a grassy hops aftertaste. Fairly plain beer overall.

Sampled from the tap at the Mundelin beer fest. Pours a hazy pale yellow with a white head that dissipates to the eddges. Aroma is full of passion fruit with sweet wheat and a hint of tartness. Flavor is also full of passion fruit with a bit of earthiness, light spice and underlying sweetness.

Sampled from the tap at the Mundelin beer fest. Pours a clear amber gold with an off-white head that dissipates to the edges. Aroma has a nice grassy pine note with backing sweet bread. Flavor has a nice grassy note with backing light grains and a hint of light flora. Quite drinkable.

A copper brown ale with a thin mocha head. In aroma, a sweet solventy caramel malt with light molasses notes, In mouth, a nutty metallic malt with light vegetable sugar, some light alcohol hotness, honey and burned sugar. On tap at Mash Tun Festival, May 19 2011.

Enjoyed on tap at Reggie’s in Chicago, IL prior to seeing the band Tragedy. I didn’t take tasting notes for this one but I remember it being pretty good. Appearance a murky dark brown with not much head at all. Aroma was sweet, definite caramel presence. Taste was pretty good, definitely a good mixture of Belgian candi, sweetness, clove, and cinnamon. Moderate body and carbonation. Of the 5 Rabbit stuff I’ve tried so far this was hands down the best of their brews.

On tap. Pours a clear amber with a light brown head that dissipates to the edges. Aroma is full of bread and grains with a sweet backing. Flavor is is full of earthy grain with a hint of backing chocolate. The slightest hint of pepper in the finish. A bit thin.

I had this from bottle at Blind Robin in Chicago, IL. This just wasn’t good at all, I had their 5 Lizard which was passion fruit like, and this one I felt had that passion fruit vibe that just made it taste soapy, very very lemony/fruity and not really that good at all. I finished it, but towards the end I was choking it down.

Finally I’ve found a bottle out here in the burbs. Got the last two in the "build-a-6" shelf at Lemon Tree. So when I mark it as "available" there, I mean it may show up there again. Time to pop this bad niño! Pour is a deep, but clear brown beer color. Few bubbles in the beer itself, but a good spongy head. Roasty, brown bread malt smell, plenty of the piloncillo in evidence. Taste has perhaps a little bit of cocoa to it, doughy bread taste, around doppelbock or porter territory, but not overly alcoholic. I cannot find chile heat here, except for a very slight burn at the sides of my tongue. Probably replaces some of the hops in keeping the malt balanced. Taste is indeed less sugary than the nose was. Despite the slightly elevated abv, the alcohol stays light, and the mouthfeel is similarly a bit light too. Not a "chile beer" by any means.

Draft sample at Midwest Brewers’ Fest. Citrusy, orangey smell, not a hop orange, but a nice citrus cream ale ester. Nice golden base beer color, thin ring of foam. Just a little more gold to it than your average light beer. Very light drinking beer, but there is malty substance. Not sticky, but going down very nicely. Light refreshing summer beer, quite tasty.
