Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

750 ml waxed bottle. 2025 vintage. 14.1% ABV. Aroma has notes of cinnamon, cocoa, licorice, coffee, chili pepper, wood, plum, butterscotch. Pours used motor oil black with an immediately collapsing tan head. Taste is bittersweet, lightly tart, and faintly spicy with bold, rich flavors of cinnamon and cocoa, and lighter touches of vanilla, chili pepper and coffee. Like drinking syrup towards the end of the bottle. One of those beers that I would have raved about, giving it a near perfect score, ten years ago. Now these types of beers seem like overly rich and sweet booze bombs. I’m needing more subtlety these days as I get older.

Bottle shared. Opaque black color, small brown colored head. Aroma and flavor are malts, light raisins, sugary, cloyingly sweet. Thick syrupy texture. Soft mouthfeel. Okay. 7-6-6-8-6

Sample, thanks fonefan! Black, small beige head. Aroma of maple syrup, wood and chocolate. Very sweet with chocolate, treacle, raisins and maple syrup. Woody, sticky, warming finish. Pastry barley wine.

(Draught at Beer Temple, Amsterdam, 15 Aug 2025) Black colour with brief, foamy, beige head. Malty, roasted nose with notes of chocolate, vanilla, coffee, treacle and soy sauce. Malty, roasted, sweet taste with dark chocolate, sweet espresso, vanilla, bourbon, oak wood, treacle, soy sauce and a balanced cacao bitterness. Full body, sweet. Ok, it's sweet and boozy, but really rich, heavy and warming. Lots of flavours, decently well balanced considering the alcohol level. Great beer!

Aroma: bold, coffee, some sweetness and brown sugars. Thankfully, no green peppers.
Taste: along the same lines, some nice boozy heat and American oak.

Smooth, creamy and slightly lactic with some cinnamon, spices, roastiness, hints of vanilla, chili and barrel notes. Soft and sweet, a bit too much lactose once again. Not bad, but I still prefer the drier 2018 vintage

Can. Pours cloudy lemon yellow with some floating junk, large foamy off-white head, citrus-honey aroma, high carbonation, mildly sweet hiney-citrus peel taste, smooth body, long finish. The honey flavor is too prominent.

Thanks fonefan! Black colour, small beigeish brown head. Aroma is liquorice, some chocolate syrup with a bit of toffeeish tones to it. Flavour is raisins, alcohol, liquorice, chocolate syrup with toffee and some slight burnt sugary tones. Burns on the gums, but otherwise a nice brew.

750cl bottle. really really nice aroma, brown sugar, malts, faint sweet bourbon notes, also more fruity notes like port wine, well blended aroma, very very good. alc. well hidden. complex, not aggressive, i think great sipper quality, but we'll see when i taste it.
flavor is sweet malts and bourbon, licorice, coconut, faint oak. very malty sweet, but it is partly hidden behind a lot of bourbon flavors. end is warming and malty sweet. quite complex, not as crazy good as aroma though.
Amazing how well alc. is hidden and not it the way - just adds body.
