Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Can (16 oz.) Pours a thick and dark, dark brown with a finger or so of dense tan foam. Aromas are an enticing mix of coffee, chocolate, vanilla, a little charcoal, and maybe a whiff of dark pit fruit (cherry/plum/prune). First sip is pretty jarring... there is a TON of sugar here and the beer comes off as too sweet for my palate. It's delicious, but not in the way that makes me want to plow through 16 ounces of this... in a way that wants a small snifter over desert or something. The coffee presence is stronger in the nose, yielding a flavor that is more of a dense chocolate cake with extra frosting. Mouthfeel is silky and smooth.

Pour is a clear gold with a large white head. Aroma is a bready malt and some hops. Flavor is a super spicy hop with the malt there just to give this some backbone. I really like the hops used with this. Very tasty.

Pour is hazy with a small white head. Aroma is kind of a generic hop. Flavor is way sweet with some more kind of generic hop. This was just a so-so hazy. Hoppy? Sure but nothing really stands out.

Can. Pour is a clear and light gold with minimal head, a bit of carbonation rising, and aromas that match the style: a bit funky, a bit tart, a bit sweet. My nose picks up kind of a lemon edge with a little bit of honey or something sweet, and a kind of salt or sea marsh edge (like when you are driving close to the ocean and first smell it...) Flavor is crisp, clean, tart, sweet. Mouthfeel is clean and this is a definitely awesome beer for summer!

Bottle at home. Pours black, nose is vanilla, chocolate, meaty, roasted, taste is sweet toffee, chocolate, creamy vanilla, hint of spice. The vanilla pretty much dominates here. 8

Dark brown. No head. Looks a bit flat and muddy. The aroma has some nice vanilla, but also quite a bit of fruitiness in there, some dark malts. The fruitiness is great - dried fruit, lots of alcohol, wood, and vanilla. Great complexity - a bit flat but otherwise this is coming together really well.

Aroma: dark fruits, moderately sweet, a bit hot.
Taste: along the same lines, nice dark fruits, caramel. A bit perfumy in aftertaste.
Overall: nice one.
