Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.
Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Strong barrel aroma, wood, some booze, coconut . Flavor has light spices, sweetness, caramel, wood. Heavy stuff.

Black topped with a khaki head that thins to a swirl.
Nose is chocolate, light roast, vanilla, toffee fudge.
Taste comprises chocolate shavings, vanilla, marshmallow, roasted tones, booze tunes.
Medium plus bodied, fine carbonation, drying close.
Tidy sipper but expected a little more wow.

Smooth, creamy and milky sweet with some lactic notes, loads of vanilla, coconut, barrel, bourbon, toffee, milk chocolate, cocoa and warming alcohol. Quite massive and heavy chocolate ice cream vanilla overdose. Surprisingly good slow sipper

Filled right up to the edge, I tell ya. Deep black, still supports a thin, performance, tan head. Smell is mostly coffee, actually, just a bit of bourbon, and them some vanilla. Not very big on nose. Very sippable taste. Not too thick. Just a large hit of alcohol. Vanilla comes in as I sip it, while any chile just tends to fortify the sharp taste. A great, powerful stout.

Pour is a hazy and bright yellow with a large white head. Aroma is a very vibrant peach and pineapple. Flavor is more peachy hop with some husky grain and a decent amount of bitterness for the style. IPA's are not really my thing but every once in a while one will stand out above the rest.

Bottle into a snifter.
Appearance: dark brown close to black in the glass, finger and a quarter of tan foamy head which dissipated at a fine pace to leave some light lace
Aroma: deep dark and milk chocolate up front with genuine vanilla beans, roasty coffee tones and subtle espresso-like qualities roll in there with the ancho chili tones providing a quaint yet balanced earthy spice vibe
Flavor: blends all the prior noted aromas together in a sweet, roasty and light spicy quality; finishes with the roasty and sweet portions and a light undertone of the chili tones
Texture: medium bodied with a superb sipping quality about it (you're nuts if you pound this beer and I'll probably ignore your beer reviewing skills after that); some smoothness to this beer, semi-dry with a smooth roasty tone to it
Overall: what an absolutely wonderful impy stout I would love to smack around some day again - if I ever get my hands on another bottle.

Appearance: jet black in the pour and black in the glass with a two finger tan foamy head which dissipated nicely to leave some light lace
Aroma: big sweet milk chocolate, subtle tones of dark chocolate, genuine coconut, nice roasty coffee tones and a light tone of vanilla-ish scents underneath
Flavor: combines all the prior noted aromas together very nicely to a superb sweet and roasty quality; finishes roasty and sweet through the coconut and chocolate qualities
Texture: medium bodied; leaning towards being a sipper, fairly smooth along the tongue
Overall: pretty nicely done pastry impy stout I would welcome again in my life.

Aroma: orange pulpy sweetness with some apricots and subtle lemony undertones; light clean malts
Flavor: blends the prior noted aromas together fairly bittersweet; mild dry finish of the orange pulpy tones and apricots
Texture: light to medium bodied, some sessionability; sturdy smoothness along the tongue, a touch of dryness
Overall: pretty good DIPA I could come back to.

Overall: I would definitely return to this saison again.

Texture: light to medium bodied, semi-sessionable; some smoothness along the tongue; but also some dryness
Overall: pretty nicely done saison I would return to and this might be good with some grilled seafood.
