On tap at Tip Tap Room, pours s hazy copper, with just a few bubbles of head. Nose brings out moderate funk, with some champagne yeast and light apple skins. Flavour is bone dry, with lots of barnyard funk, dry champagne, and apple skins. Bone dry, so much so that it puckers in the mouth. Excellent.

Orange, somewhat flat. Nose feels musty, not so intense and somewhat covered. Still some apples down there. Taste has apples, light bitterness with apple acidity. Good balance but lacks that vinegar balsamico that I like and also intensity that the previous version had. Still enjoyable.

Orange pour with not much carbonation. Funky nose, farmhouse and some blue cheese-barnyard. Taste has light balsamico, dry and sweetish. some blue cheese mould, quite intense. Dry herbal funk in the finish. Really liking this one.

Big funky dry nose with tons of apples skins. Mildly tart nice sweet backbone. A touch of smoke and sourness. The sourness tickles the back of throat. Decent stuff

The palate is light bodied. Moderately tart with the same intense notes of barnyard and a mild bitterness on the finish.

The palate is light bodied with light spritz. Strong barnyard flavors throughout with light apple sweetness running through followed by moderately intense savory umami and meaty notes on the end.
