In 2015, Hubbard’s Cave was developed as an alternative to our Belgian Style Ales. Producing American Style ales, primarily imperial stouts and Hubbard’s Cave signature Fresh IIPAs, Hubbard’s Cave is a refreshing addition to the Une Anneé Family. Named after the Chicago Hubbard Street traffic tunnel on Interstate 90/94, next to where the brewery was born, Hubbard’s Cave has quickly grown to produce some of our most popular offerings.

Tap at Sidedoor. Sweet malts, can’t tell if the belgo yeast is there, maybe a mix? Foamy white head on top of an orange-tan body. Has some earthy caramel-toffee tones. Enjoyable, but I’d prefer it a little more crisp. Sweet malt. Earthy Hops. OK.

375ml bottle I picked up in Madison pours a hazy gold with lots of frothy, foamy white head. Nose has lemon, straw, white grape, lime, some candy, some stale malt. Flavor has a big white grape juice thing, lemon juice, some white pepper, straw, some light chardonnay barrel, hints of corn. Slick finish with a touch of booze.

"American Wild Ale." 7 oz sample at Standard Market. Slightly cloudy copper body under a slightly stiff layer of foam. Nose of fresh berry nice with just a bit of tartness. Taste immediately has me thinking of a nice Belgian spot or even lambic. Sourness is merely pleasant, not puckery. A fine, moderate sour that I am happy to say was blended from the many talks of a local brewer.

Bottle shared by Adam, thanks! Pours a cloudy light yellow gold with a white head that dissipates to the edges. Aroma has notes of earthy grains and bread with some musty Belgian yeast and a touch of plum. Flavor has a bit more plum with grains and bread with a touch of Belgian yeast.

Draft. From notes. Chocolate and cocoa. Smoked malts. Pretty good, a little thin for my personal preference.

Pours a very cloudy yellow-gold, with thick, white head. Strong citrus/grapefruit aroma, with other notes, too. Some soap, some vanilla. Flavor is citrus, with bitter hops, some soap, vanilla. Finish is quite bitter, with lingering citrus. Quite good.

On tap @ WOB Appleton. I agree with Kaser; this beer is absolutely incredible. Pours a hazy orange/gold in color with a nice white head that lasts and lasts. Aroma and taste is FULL of tropical fruits and citrus hops; no caramel malts here to get in the way! Oranges, pineapples, apricots, and peaches blend well with an intense hop bouquet that satisfies. Full bodied, average carbonation with a dry and moderately bitter finish. Absolutely love this!!!

On tap @ DryHop. Pours a hazy yellow gold. Big frothy white head leaves plenty of lacing throughout. Aroma is yeasty, with tropical fruit and citrus notes. Taste follows, with coriander spice, orange, pineapple and bananas making there presence. ABV is well hidden for 9.1%. Medium/full body with a good bit of carbonation and a slightly dry finish. A very nicely hopped up Belgian.

Bottle. Pours a cloudy orange with an amber off white head that dissipates to the edges slowly. Aroma has a bit of perfumey pine with a bit of grassiness and a bit of sweet grain backing. Flavor is much more sweet with grains and bread backed by a hint of grass.
