About
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Taste comprises orange pith, grass, grapefruit zest, mandarin, light pine flicker.
Medium bodied, fine carbonation, semi drying close spliced with juicy come very lightly resinous hop bitterness.
Decent juicy IPA.

Can 44cl. @home poured into a shaker. Hazy pale golden colour, good frothy white head, half-way lasting, good lacing. Aroma pale malt, orange marmalade, peach, mango, light resinous hops. Smooth taste medium sweet and bitter, malty, orange marmalade, grapefruit, spicy notes. Meddium bodt, oily texture, average carbonation, smooth semi-dry sweetbitter aftertaste, good.

Draught Small ir persistent yellow-cream head over virtually black beer. Lots of roast, dark green leaves bit of liquorice, meatroast, hint at Maillard. Very creamy flavour & feel. Oatmeal obvious, coffee cream, lots of (mild) roast, and very slightly mineral. At least medium bodied, good carbonation. Nice.

Hazy yellow with a short white head. Aroma of pineapple and tropical fruits. Flavour is light tropical, bitter watery base, melon on a tangy fruity finish.

(Keg at Taphouse Train Factory, 20260731) The beer poured golden and hazy. Its head was medium sized and white. Aroma had zesty fruits, mango and lightly marmalade. Palate was medium bodied with medium carbonation. Flavours were citrus fruits, floralness, zesty notes, grapefruit and bitterness. Aftertaste had honey, zesty notes and bitterness. Decent.
