Backlog Oct 21. Dark red body, with a medium, creamy, light pink head. Aroma of ripe cherries, moderate thyme, some stone fruits. Tastes similar, more vinous, with a bit more thyme. Medium, a bit creamy mouthfeel, with a moderate carbonation. Finishes smooth, elegant, a bit vinous, with cherries, slightly funky. Very tasty, balanced and unique! 8 / 4 / 8 / 4 / 17

EB from last weekends Pellicle Vergistingen dinner. It’s not unknown that I love sour funky saison so this is right up my alley. Perfect sour, bitter and funk balance. Reminds me a lot of Saison de la Senne 2021 which is one of my favourite beers.
EB from last weekends Pellicle Vergistingen dinner. Great dry and light funky cider with great aromatic grape skin, gooseberry, grapefruit and pine hops. Reminds me of dry hopped sours which is something I love.

EB from last weekends Pellicle Vergistingen dinner. Paired with brownie, milk chocolate mousse, merengue and hazelnut. Just a great classic imperial stout. Nothing fancy, just tasty! Decadent dessert and a damn good pairing.

EB from last weekends Pellicle Vergistingen dinner. Impressed with how balanced this is given the acidity of black currants. Mellow with great fruitiness, mellow acidity, solid funk and a elderflower floral hint. Amazing stuff!

EB from last weekends Pellicle Vergistingen dinner. Paired with celeriac, onion and cauliflower. Dry, funky and with plenty of complex apple character. Not complicated, just a really good natural cider. And the veggies are enhanced by the apple and funk.

EB from last weekends Pellicle Vergistingen dinner. Paired with potato, creme fraiche and seaweed “caviar”. Great fat vs bright pairing. Possibly the best elderflower beer I’ve ever tried. Perfect aromatics, balanced acidity and solid funk. Masterpiece!
