Description
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.

The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.

Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Bottle bought in Austin, TX. Pours a clear amber color with a khaki head and very good retention. Good lacing. Not much nose. The taste is as advertised: Light and sweet caramel malt with a light hop finish. Clean. Soft mouthfeel. Would have been better without the hops.

A good turgid pour into the glass and no real aroma. The taste was all about the sweetness and something that I found sickly as I neared the end of the glass. The mouthfeel was ok. This really wasn't for me; beer needs some sort of bitterness otherwise its just an alcopop.

On tap at Celis, pours a hazy copper with a small white head. Aroma is very laid back, with toasted nuts and a touch of sweet bread. Flavour is very laid back, with toasted nuts and some bread. Boring but clean. Meh.

On tap at Celis, pours a hazy blonde with a small white head. Aroma brings out citrus hops, light pine and biscuity malt. Flavour is similar, with floral and citrus hops, some pine and toasted biscuity malt. Dry and floral finish. Solid.

On tap at Celis, pours a hazy golden blonde with a small white head. Aroma reveals notes of candied sugar, esters and some Belgian yeast. Flavour is fairly estery and floral, with Belgian yeast, candied sugar and a touch of bubblegum. Not too sweet and actually fairly authentic, surprisingly. Pretty solid.

On tap at Celis, pours a hazy blonde with a small white head. Aroma brings out coriander and light pillowy wheat. Flavour is loaded with coriander, fluffy wheat, and biscuity malt. Dominated by the coriander - soft floral palate. Solid.

Bottle. Hazy yellow with a creamy white head. Lots of minuscule suspended particles. Aroma is fruity and citric. Taste is citrus, orange zest. Juicy, hoppy finish. Nice.

From old tasting notes. Brewed in Austin, Texas. Cloudy pale yellow color. Thin misty white head. Acidic grapefruit nose.Tangy lactic character. Interesting spicy citrus malt flavor. Refreshing and tasty.

From old tasting notes. Brewed in Austin, Texas. Bright Zinfandel pink color. Small bubbly white head. Sweet raspberry fruit aroma. Wonderful tangy raspberry flavor. There is an underlying lambic-like character here and it makes for a delicious and faithful reproduction of the Belgian classic style.
