Description
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.

The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.

Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Old tasting notes. Brewer in Austin, Texas. Orange red color. Frothy white head. Malty toffeeish aroma. Sweetish malt flavor is full bodied and flavorful. Pleasant herbal hop finish.

From old tasting notes. Brewed in Austin Texas. Brilliant yellow gold color. Bubbly white head. Complex malt aroma with hints of citrus and spice. Spicy fruit malt flavor has notes of orange peel and anise seed. Very good.

0.355l bottle. Hazy golden body, thin white head. Aroma of biscuit, honey, orange zest, peach and spices. Taste of bread, honey, coriander and some hops. Less fruity and more bready than the Hoegaarden, but still fine.

Bottled January 22nd 2016.

Pours a light gold, slightly hazy with plenty of foam. Long lasting foam and good lacing.

Cloves coriander yeast in the smell.

Taste of the spices I mentioned. Hints of orange zest coming through and everything works well together. Fresher bottles would have been nice.

Creamy smooth mouthfeel.

Second pour and things get appropriately cloudy.

A very impressive beer.

Pours a yellow from a bottle, nice clean witbier, classic without anything over the top. Good beer.

Had this back in the day in Hopdevil pub, one of the first beer pubs in Zagreb, now closed. When Alen from Svijet piva (World of Beer) got it on tap, he invited me for a drink and was praising this beer as one of the best. Murky, almost opaque yellow, medium white head, medium lasting. Citrus, lemon wafer. Bitterish, spicy, sourish, lively, sweet. Drinkable. Very good actually.

Rated from old notes. Taste is yeast and wheat, with a strong clove note and citric undertone. Similar to a Hoegaarden, but with more body and more taste. Very good stuff. Nice to see it is being made again. Re-rated on 11/2017. Draft at Pinthouse Pizza. Sweeter than I remembered. A bit too sweet. Dropped from 3.7 to 3.3

Keg at the Hanging Bat. Pours hazy gold with a thin white head. Aromas of banana and lemon. Taste is more banana, sweet finish.

TX bottle Hazy to cloudy yellow straw color, fluffy white head. Aroma of subtle spice and orange peel, light banana. Taste has citrus, subtle bubblegum, light spice. Good example of the style.
