Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can shared by Grumbo: Poured a bright bright yellow with a white fast dissipating head. Aroma is sour tangy, guava, passionfruit, mango. Taste is sour tart, guava, passionfruit, juicy, tangy, acidic.

4/9/2021. Can shared at Suffolk’s RateBeerian gathering. From Hoptimism. Pours hazy pale orange gold with a small frothy white head. Aroma of rhubarb, sour peach, unripened strawberry, vanilla custard. Moderate sweetness and sourness. Moderate body, oily texture, quite fizzy. Decent sour, but preferred the Tropicale.

4/9/2021. Can shared at Suffolk’s RateBeerian gathering. From Hoptimism. Pours hazy, pale yellow gold with a small frothy white head. Aroma of passion fruit, papaya, guava, mango. Moderate sweetness, medium bitterness, medium sour, touch salty. Medium body, oily texture, average carbonation. Lovely sour finish. Very nice.

375ml bottle. Cloudy, yellow-ish golden colour with average, thick, frothy to creamy, moderately lasting, minimally lacing, white head. Funky, spicy, yeasty and grassy hoppy aroma, notes of fresh hay, a touch of mustard seed, fruity undertones with hints of apricot and peach. Taste is dry, tart-ish, fruity and mildly funky, yeasty, notes of lemon peel, some fresh hay, a touch of unripe apricot and peach. Watery texture, smooth and soft, minimally astringent palate, medium to fine, prickly carbonation. Well balanced, very refreshing - good.

KYGG 170721. Red color with no head. Aroma is berries, sourness. Flavor is oxidation, acidic, lactose, raspberries, black berries, black current. Nice beer.

Can sample at a tasting at Yoav's place. Murky pinkish color. Yogurt, some pickled vegetables, fruitiness, tart, citric. Nice and refreshing.
