Pastore Brewing and Blending produce fresh and aged sour and wild beers.
The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can from Hoptimism. Hazy bright orange with a quickly evaporating white head. Aroma is tropical mango and slight citrus. Tart fruity taste. Thin slight watery body.

Head gone in seconds over muddy ochre-ish red beer. Sourish nose, red/pink fruit, fresh, young shoots. Very sour, lactic acid onslaught. Unripe berries as raspberries or billberries. Very serious acidbite, acidthinning, dry-out effect, burning feel. Seriously, this is too sour. I wonder where they put the "pastry"?

Canned. From K-Citymarket Tammisto, Vantaa. Poured light golden in color, unclear and fizzy head. Blood orange and red greapefruit kinda aroma. Tart and lactic youghurty with mouthdrying finish. Really feel the fruits here.

Pours like fruit purée, no head at all. Pure sea buckthorn tart tangy-ness, with a bit of salinity and herbaceous notes at the end.

Bottle, 750 ml shared with Max, Miro B and Zec. Black with small beige head. Some chocolate, roastiness, barrel, dark fruit, vinous, medium sourness. Low carbonation. Medium bodied. Tad thin finish, but gets better as it warms up.
