Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Bottle: Poured sludge brown with a bubble light brown head. Aroma is roasted malts and orange. Taste is tart fruit, orange, roasted malt comes in, some smoky ash.

Bottle: Poured a murky orange with floaties and a bubbly frothy head. Aroma is pungent strawberry. Taste is tart sourness, grain, strawberry, great balance.

44cl can. A murky purple red beer with a pinkish head. Aroma of tart fresh raspberries and strawberries. Taste of sweet fresh and sourish raspberries and a bit strawberries, yeast.

Tannic cherry, beery funky, woodsy and vinous Lovely. Will show even better in a couple of years

Sour and tart, lots of red raspberries and a good amount of strawberry, which doean't taste half bad. A bit one-dimensional but very nice.
